Carrot Cake Cupcakes
Let me start this off by saying carrot cake is NOT my jam. If I see it on a restaurant menu, I always steer clear. And I can pretty much say I never "crave" carrot cake.
But Easter is right around the corner and I am going outside of my little comfortable baking box. I thought about what recipes might be great for the holiday and carrot cake was the first thing to came to mind. Why? Maybe because bunnies eat carrots? I don't know. I love cupcakes. It's just the perfect amount of cake and frosting in one serving. So I figured I would mash one thing I love, with another thing that I don't love so much, and pray for a good outcome. And BOOM I am pretty sure these cupcakes turned out fan-fucking-tastic 🙌🏼

Hands down, my favorite part of Easter is the scavenger hunt. And my husband has always done a scavenger hunt for me ever since we were in college 😊. He's the best. Yes I am 30 and still do scavenger hunts. Judge me. Counting down the days to crush my family in scavenging some eggs!
