Pecan Pie Bars

Ah. Pecan Pie. One of my favorite desserts on Thanksgiving!


I can't believe it is already the week of Thanksgiving. This year has been a whirlwind with the pandemic, election, and just everything 2020 has thrown at us. I am pretty sure everyone I know has had their Christmas decorations up for at least a month now LOL. 2020 is a vibe.


We are hosting Thanksgiving this year. I know there are some states who are banning gatherings over a certain amount of people with the COVID numbers on the rise. I get it. BUT IT'S THE HOLIDAYS. I can't imagine not spending it with my family. In my opinion (take it or leave it), as long as you aren't having hundreds of people at your house, you are staying safe by social distancing or wearing your mask, and you WASH YO HANDS, I think you go and enjoy the holidays.


I will be posting the desserts I will be making for Thanksgiving each day leading up to the big day. First up are these delicious little Pecan Pie Bars! I didn't think I was a fan of pecan pie when I was younger, but when I actually tried it, I was SORELY mistaken. It is delicious. Especially with a big ass dollop of whipped cream or ice cream (dairy-free of course).



This healthy version of pecan pie is a must for the holidays! Made with almond flour and naturally sweetened with coconut sugar and pure maple syrup - you can't go wrong here. The best part other than these being #dairyfree, #glutenfree, #grainfree, #paleo and #vegan - they are SO SIMPLE TO MAKE. You can whip these up the day-of with no added stress of trying to pull everything together. Pro tip - give it to your husband to make. These are so simple to make even a man can figure it out.
