Peppermint White Chocolate Cake Pops

Can you believe Christmas is 9 days away?? 9 DAYS. I can't believe it is already here.


While the first half of 2020 seemed to drag on, this second half has definitely raced by. At least for me. I cannot believe we are getting ready to end this hellish year and move onto 2021. I think we can all agree we are expecting BIG things from 2021. 2021 better show up dammit!



I feel like I have been running 43494832048 miles a minute lately and haven't had much time to ground myself. I don't necessarily feel like I am giving 100% of myself to every project I dive into because I am spread across so many right now. But that's OK - hoping in this next week or two we will be able to level off and re-prioritize. WHEW.


So with that being said, I really need to get on my holiday baking grind. I have some serious baking coming up this weekend with both sides of my family, so it's time I get my shit together and figure out exactly what we are coming up with this year. I figured these cute little cake pops were a nice, easy start!



I have used Bob's Red Mill Gluten Free Vanilla Cake Mix before and have LOVEDDDD it. So I figured it was perfect for this peppermint recipe! It is light, delicously fluffy and #glutenfree! I also added some crushed up peppermints to half of my batch when making these. When I was rolling the dough into balls, I added some into each ball for a little extra crunch. HIGHLY recommend this 👌🏼


This recipe is pretty easy for the most part. The thing that takes the most time is waiting for the little pops to harden in the freezer so you can coat them with Lily's Chocolate 😊. I will be honest, I am not a big peppermint fan.....but Lily's Peppermint Flavored Baking Chips are the BOMB. The peppermint is really slight and it pairs perfectly with the white chocolate. If you can't get your hands on that, use Lily's White Chocolate Baking Chips!


Also note for this recipe you will need something that will hold your cake pops up-right after they are coated in the chocolate and decorated. I used an Amazon box and poked holes in it for the sticks to stand up in!
