Pumpkin Streusel Muffins
Hellooooo late October 🥴🥴🥴
First pumpkin recipe and it is damn near Halloween. I can't even believe it. Usual excuse - life is chaotic as usual.
We are currently going through a "cold front" down here in Florida....what the weather folks are considering "sweater weather". After living in Michigan for the last year, it is even MORE laughable how ridiculous winter is down south.
I hear it is already snowing up north, and I am sooo thankful we don't have to do another winter in the severe cold. I really don't understand how people do it - so props to everyone who lives in the tundra states. You guys are the real MVP's.
So back to the pumpkin. Since it really hasn't felt like fall down in Florida other than the last few days, it hasn't put me in the full blown, fall baking spirit. Something about the cold weather brings it out those autumn vibes, and we really just don't get that down here.
Regular pumpkin muffins felt a bit boring - so I decided to throw in a little extra love on top with some STREUSEL 🤩 These Pumpkin Streusel Muffins are the bomb! They are the perfect amount of pumpkin and sweetness to round out this yummy muffin.
I looked ahead at our schedule for the rest of the year and my hands and feat started to sweat 🥴 For some reason the fall season seems to be the busiest compared to any other season. We jam pack our schedules months in advance, and when it comes down to it, every single weekend seems to have something going on. Trust me, I like to plan. But DANG I am not seeing any open weekends for a while.
