Strawberry Cheesecake
Really this recipe should be called "Eli's Strawberry Cheesecake".This recipe goes out to one of my favorite little dudes who asked me to make a strawberry cheesecake with the strawberries he hand delivered me from Southern Hill Farms 😊
Eli is 6 years old and LOVES strawberry cheesecake. It's one of his favorite desserts. So when his momma asked him what sweet treat he wanted to see from these strawberries, strawberry cheesecake was IT, no questions asked. This recipe is pretty easy and straightforward. The two steps that take the longest are soaking your cashews prior to starting the recipe, and letting the cheesecake solidify in the freezer after it has been layered and made. The wait is worth it though y'all! This stuff is YUM.
I was worried that the "healthy" version of strawberry cheesecake wasn't going to match up to Eli's expectations. All that cream cheese, sugar and butter in the standard version - that is heaven to kiddos these days. But I am SO glad to report that Eli really liked it! He was so excited to try it and dove in right away. I mean, look at that sweet face. ANGEL BABY.
Also happy to report that his CUTIE PATOOTIE 2 year old brother James really enjoyed it too 😍 Eating cheesecake in all his naked glory. Life is GOOD. My girl Kaley makes some prettttty cute kiddos. Love these little dudes so much!
I would keep this in the freezer until you are ready to eat it. For example, I would cut a slice or two each morning and thaw in the fridge so that we could have it after dinner for dessert that night.
