Strawberry Pop Tarts

Reliving my childhood dreams one day at a time.


Y'all CAN NOT TELL ME you didn't love pop tarts as a kid. We didn't stock these regularly in the house, but when we did.....MAN I loved these sugary little snacks.



We have SO many kids in our neighborhood, always outside, running around, playing, biking, and doing everything kids should be doing...playing outside. The other day I saw a few kids strolling through the hood munching on some pop tarts, which got me thinking. Could I make this classic breakfast/snack into a healthier recipe?



Well I gave it my best shot y'all. If there is one thing I would do differently, it would be to chill the dough overnight and use more tapioca flour when rolling it out. when the dough hits room temperature it gets real sticky, and it is a mother fucker to try to handle. Chill it for as long as you can, and don't be shy when you throw that tapioca flour on the parchment to roll it out. The more the merrier.



Most of my recipes are pretty quick and easy to make...I will give you the heads up now that this one definitely takes some time and effort. Each step takes quite a bit of time, especially if you are a perfectionist wanting to get it right the first time around. The dough can be a bit finicky to handle, but once you get the hang of it, the rest of the recipe is a breeze.


I have been doing quite a bit of stress eating lately, and my face is showing for it. We are going through some big life changes recently that I can FINALLY share on the blog. I know I have been saying in my last few posts how bananas everything has been.....well this is why.


We are MOVING y'all. My husband got a promotion and we are relocating.....to MICHIGAN. I repeat, MICHIGAN.



I am a born and raised Floridian. I would be lying if I said I wasn't terrified for the cold weather up there 🥶. But I am SOSOSOSOSO proud of my hubby on getting this promotion. And I am excited to adventure out of the sunshine state....even if it is to one of the most coldest LOL.


Our timeline will be moving pretty quickly based on how everything is going so far. House is under contract with a close date of mid-September. So that means we need to find a place up there to live ASAP. I have a feeling my next few weekends will be spend up in Michigan flying back and forth trying to figure out where our next home will be.


Anywho - I don't know how many posts I will be able to get up in this transition timeframe, but I will do my best!
