Can I get a WHOOP WHOOP for these #glutenfree whoopie pies 🙌🏼
This was my first shot at making a whoopie pies and I am pretty stoked at how they turned out. The decadent, fluffy rich cookie paired with the sweet, creamy filling is exactly what I needed on this Tuesday.
Minimal ingredients and super easy to make. If you have been with me for a while, you know these are my staples when creating a recipe! This recipe yielded about 6 whoopies for me. You could probably make the cookie a little bit smaller and get more, but I like me a good size whoopie.
Couple tips when making these. When mixing the dough - be sure to mix for about 5 minutes so the ingredients have time to set. If the dough is too sticky, place in the fridge for 15 minutes so you can work with it. Wet your hands when you mold the cookies to help keep the dough from sticking to your fingers!
